This Honduras coffee is from Carlos Amaya & Finca La Joya.
As a young, innovative, 4th generation coffee producer, Carlos Amaya has taken on leadership at his family farm, Finca La Joya.
His passion for quality control and research into alternative processing methods has not only improved coffee quality for Finca La Joya, but his reputation raising Honduran coffee to a new standard.
This lot is from Nuevo Paraiso was depulped upon harvest and dry-fermented in bags for 76 hours. The coffee was then dried on raised beds in full sun for 25 days before being prepared for export.
